enchilada quinoa

I got this recipe from Laura, the lady who owns the guest house we are renting! This stuff is good. And very easy, I made it in ten minutes on my lunch break! Plus it’s full of protein from the quinoa and beans–and normally, I hate beans no matter what, but they are deeeelicious in this dish!

What you will need:
Quinoa (I used the microwaveable frozen packs from trader joes! Super easy)
Enchilada sauce (again, I used trader joes’ cause I love TJs and there are no preservatives or artificial flavorings involved!)
1 can of black beans
1 can of corn (could also use fresh)
Cherry tomatoes
Cilantro
Black olives
Shredded cheese (optional)
Plain Greek yogurt or sour cream (optional)

what to do:
cook your quinoa (two servings) ahead of time. put it in a medium sized microwave safe bowl and add half the can of beans and half the can of corn. Stir in enchilada sauce–don’t use too much, just enough to saturate the quinoa. Microwave for a minute. Add a layer of cheese (during the time of optimum meltability), fresh cilantro, tomatoes, olives, and Greek yogurt or sour cream.

You could do soo much with this! Put it in a tortilla, add avocado and jalapeños and chicken and crunched up tortilla chips!!!!!! The possibilities are endless!
